About this study
The purpose of this study is to learn if eating a vegetarian diet changes the make up of a person's fatty acids as well as their levels of inflammation.
Participation eligibility
Participant eligibility includes age, gender, type and stage of disease, and previous treatments or health concerns. Guidelines differ from study to study, and identify who can or cannot participate. There is no guarantee that every individual who qualifies and wants to participate in a trial will be enrolled. Contact the study team to discuss study eligibility and potential participation.
Inclusion Criteria
- Adult 18 – 65
- BMI 28-40 kg/m2
- Obese vegetarians (following diet for ≥ 5 years and consume low-fat dairy products) and non-vegetarians that are matched for age, sex, and body mass index
Exclusion Criteria
- Nicotine use
- Use of medications that effect VLDL or FFA metabolism
- Use of anticoagulants
- Use of fish oil supplements
- Pregnant women
- Women with polycystic ovarian syndrome (PCOS)
- Patients with diabetes mellitus
